    Don’t bother with cooking wines. They are cheap for a reason. Your food will taste better if you use the same wine you would enjoy sipping. Ask at your local liquor store for a nice, inexpensive sherry. Tell them you plan on using it for cooking, and they will point you in the right direction. You’ll be glad you did.

    I use Taylor’s dry sherry. Remember – one portion for the recipe, and one for the cook. ;-)
