Cabernet Verjus (red) is sharper in feel to the interior of your mouth than the smooth feel of the white. More akin to a vinegar, but no where near the acidity, it imparts a nice red wine feel, but as if it were a juice. Three parts verjus to 1 part oil makes for a great salad dressing that is best suited for greens with sharpness like arugula.
From deglazing a steak pan or splashing on a pork chop as you finish cooking, this verjus has enough personality to make a difference without imparting a personality that a red wine might give.
There are many variations of Verjus, all with their own flavor profile. We like this one for it leans towards smooth and less harsh than many we have tried, without being wimpy. It has roots in good grapes, and thus still has a flavor you can identify with.
