The Chianti Classico zone in central Tuscany has long been noted for the exceptional quality of its extra virgin olive oil as well as its famous wine.
Pressed on November 27 at San Gusme, Italy, this new oil will retain its delightful peppery finish for only a few months into the new year, after which the taste will mellow into the fine Italian oil most are familiar with.
Newly pressed Tuscan Olive Oil is a rare find outside of the production areas in Central Italy. As with all Tuscan olive oil, this La Chiusa Estate oil is bright green immediately after pressing. In time, it turns a clean yellow with greenish reflections. It has distinctive aromas of lemon, artichoke and white pepper. Flavors are attenuated somewhat by heat so it is best used as a condiment in dressing breads or salads, or adding a further touch of class to raw or cooked vegetables, soups, and pastas.
