8 1-inch slices of boneless pork loin
Marinade
1/4 cup olive oil
juice of 1/2 orange
juice of 1/2 lemon
1/4 cup apple cider vinegar
1 teaspoon sesame seed oil
1 tablespoon Cholula® Hot Sauce
1 tablespoon dijon style mustard
2 cloves minced garlic
1/2 cup of loosely packed rough cut cilantro
1/4 teaspoon salt
1/8 teaspoon black pepper
Glazed Apples
2 red apples, prepped
2 tablespoons melted butter
2 tablespoons brown sugar
1/2 teaspoon cinnamon
Preparation
1. Place the marinade ingredients into a blender, or a tall container if using a hand blender. Blend until smooth.
2. Place the pork loin slices into a re-sealable plastic bag and add the marinade. Seal and refrigerate for a minimum of 30 minutes; overnight is best.
3. In a small bowl, combine the brown sugar and the cinnamon. Core the apples and slice each apple into 8 slices.
4. Brush apple slices with the melted butter and sprinkle both sides of the apple slices with the sugar mixture.
5. Preheat the barbecue grill to medium-high heat. Remove the pork loin slices from the marinade and place on the grill. Discard the marinade. NOTE: NEVER baste with marinade that was used for raw meat.
6. Cook the pork loin slices on both sides until cooked, but still juicy. You can use a meat thermometer to confirm that it has reached 165 degrees.
7. After you flip the pork loin slices, place the apple slices on the grill and cook for approximately 3 minutes each side, or until golden brown on both sides.
8. Remove the BBQ Pork Loin with Glazed Apples from the grill and enjoy.
